Do you know your cheese? All cheeses aren’t the same. Obviously. The reference isn’t towards milk, region, vegan or age but the type of rennet used in the cheese making progress. I learned that with my first blog post Say Cheese! Some cheeses have animal rennet and some microbial (vegetarian friendly) rennet. Check out the packaging or ask to make sure your cheese is in line with you. Some packages don’t specify. I mean, like, do you eat chicken sausage cased in pork if you don’t eat pork? I don’t think so..
Oh, and what is rennet? It’s an enzyme that curdles the casein in milk.
