Tatum’s Tuesday Tips? When preparing a recipe that requires the eggs to be separated, whites from yolks, do so when the eggs are cold. When whipping the whites, this works best at room temperature. Oh, and wash your hands. The oil from your hands interferes with the separating process. I am speaking soufflé. These days the hand washing is a no brainer but this is a specific to this.
