We remember a place and most often many experiences where food is present. People always remember the food. The experience is equally as imoprtant. Memorial Day celebrations are less festive this year but the food doesn’t have to suffer. Hand pies make me think of picnic baskets and picnics. The start of summer. Family and friends gathering. Beaches.
I like them for breakfast too. Excellent with a side of yogurt.
They are easy to transport and no one has to worry about sharing.
These I made with my Gourmia air fryer. You will most definitely want to learn the blueberry juice that burst from that first bite run down your chin. Crispy warm pillowy slightly chewy puff pastry from the grocer doesn’t disappoint once cooked. This is one of the best. Next to making your own of course.

12 cups of blueberries
1/4 cup of granulated white sugar
2 teaspoons of cornstarch
1/2 teaspoon ground cinnamon
zest from 1 lemon
1 17 oz box of puff pastry, thawed
1 egg + 1 teaspoon of water for the egg wash
1/2 cup of sugar in the raw
In a medium bowl combine the blueberries, sugar cornstarch, lemon juice and zest and cinnamon
Spread on sheet of puff pastry out on your work surface and cut into 4 even squares. Place 1-2 tablespoons of banana filling into the center of the square and fold into a triangle, pressing down to seal the sides. Repeat with remaining three squares and second sheet of puff pastry.
mix your egg washing brush over the pff pastry and with the tines of your fork, seal the edges of the pastry down once again.
Using a pairing knife, cut a small slit on the top of each pastry and sprinkle with the sugar in the raw.
Spray the basket of the air fryer with cooking spray and then place two turnovers at a time in the basket, transferring the remaining turnovers to a tray and keep refrigerated. Press the bake/dessert setting at 320 degrees and reduce the time 15 minutes or until the puff pastry is deep golden brown.
Remove the cooked turnovers and repeat with the remaining, making sure to spray the basket in between each batch. Serve warm or at room temperature.
