Hey Hot Potato! The Loaded Baked Potato

With left over items from a Blue Apron box, I made this. The loaded baked potato. Bacon, fried egg, salts and pepper with a little labneh tarragon dressing. Labneh is a Middle Eastern yogurt. You can use Greek yogurt if you can’t find Labneh. I hope you do as it sure is good for this dish.

Slightly rub your potato with oil or butter (I use clarified butter), and season as desired. I like sea salt and pepper. Wrap in aluminum foil. Place in a pre-heated 350 degree Fahrenheit oven. Cook until desired doneness. I appreciate the softer side slightly over the tipping point. After removing the potato from the oven, open foil to release some heat. Speaking of heat, now heat a frying pan with your oil of choice. Fry that egg how you like. I rough chop bacon with a steak knife despite having some knife skills under my belt. Lazy. If you don’t eat meat, mushrooms are a great alternative. Sautéed or smoked, perhaps crispy.

Chop tarragon and add to the labneh. Plate and consume happily.


Potatoes, especially with the skin, provide quite a bit of nutrients. This little beauty is a meal all on its own. Oh so satisfying.
